Clear Chicken soup

Inspired by the Polish chicken soup Rosol, but without the noodles and some added seasoning and herbs. Made with a flavorful homemade chicken broth and a medley of aromatic herbs and seasoning, this soup is both comforting and nourishing. Without the addition of noodles, this recipe keeps the focus on the rich and clear broth that will soothe your soul.

Ingredients

  • 1 whole chicken (about 4 pounds)

  • 10 cups water

  • 2 large carrots, peeled and diced

  • 2 celery stalks, diced

  • 1 large onion, diced

  • 4 cloves garlic, minced

  • 1 bay leaf

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried parsley

  • Salt and pepper, to taste

  • Fresh parsley, for garnish

Instructions

  1. In a large pot, add the chicken and cover it with 10 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low and let it simmer gently for 1 hour. Skim off any foam or impurities that rise to the surface.

  2. After an hour, remove the chicken from the pot and set it aside to cool. Strain the broth through a fine mesh sieve into a separate clean pot or bowl, discarding any solids.

  3. Once the chicken has cooled, remove the skin and shred the meat into bite-sized pieces. Set aside.

  4. Return the strained chicken broth to the pot and place it over medium-high heat. Add the diced carrots, celery, onion, minced garlic, bay leaf, dried thyme, dried rosemary, and dried parsley. Season with salt and pepper according to your taste.

  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes until the vegetables are tender but still firm.

  6. Taste the broth and adjust the seasoning if necessary.

  7. To serve, ladle the clear chicken soup into bowls and garnish with fresh parsley.
