Spanish omelette

Spanish omelette is a beloved and versatile dish in Spain. Made with eggs, potatoes, onions, and sometimes peppers, it's rustic comfort food. Thinly sliced potatoes are cooked with onions and eggs until golden and fluffy. It's rich and flavorful, showcasing humble ingredients in a delicious way. Whether hot or cold, it brings warmth and comfort.

Ingredients

  • 4 medium potatoes

  • 1 medium onion

  • 6 large eggs

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 cup olive oil (for frying)

Instructions

  1. Peel, rinse, and dry potatoes. Slice them into thin rounds (1/8 inch thick).

  2. Peel and chop onion finely.

  3. Heat olive oil in a large non-stick skillet.

  4. Cook potatoes and onion for 10-12 min until tender.

  5. Drain excess oil from cooked potatoes and onions using a colander.

  6. In a large mixing bowl, beat eggs with salt and pepper.

  7. Gently fold in the drained potatoes and onions.

  8. Wipe the skillet clean and heat 1 tbsp olive oil.

  9. Pour mixture into the skillet and spread it evenly.

  10. Cook undisturbed for 5-7 min or until edges turn golden.

  11. Carefully flip the omelette using a flat spatula.

  12. Cook for another 3-4 min until cooked through and browned.

  13. Slide the omelette onto a cutting board or serving plate.

  14. Allow it to rest before slicing into wedges.

  15. Serve warm as a main course or tapas dish, alone or with salad/bread.
