Ingredients
2 tablespoons olive oil
1 onion, finely chopped
4 cloves garlic, minced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup Arborio rice
1 teaspoon smoked paprika
1/2 teaspoon saffron threads
1 teaspoon dried oregano
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
2 cups seafood or fish stock
1/2 cup white wine
1 pound firm white fish fillets (such as cod or halibut), cut into chunks
1/2 pound large shrimp, peeled and deveined
1/2 pound mussels, cleaned and debearded
1/2 pound clams, cleaned
1/2 cup frozen green peas
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions
Step 1. In a large paella or wide skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
Step 2. Add the sliced bell peppers to the skillet and cook for about 3-4 minutes, until they start to soften.
Step 3. Stir in the Arborio rice, smoked paprika, saffron threads, dried oregano, salt, and black pepper. Coat the rice well with the spices and toast it for a minute or two.
Step 4. Pour in the seafood or fish stock and white wine. Stir well and bring the mixture to a simmer. Cover the skillet with a lid and cook for about 15-20 minutes, or until the rice is almost cooked and most of the liquid is absorbed.
Step 5. Arrange the fish chunks, shrimp, mussels, clams, and frozen green peas evenly over the rice. Cover the skillet again and cook for an additional 8-10 minutes, or until the seafood is cooked through and the shells of the mussels and clams have opened.
Step 6. Remove the skillet from heat and let it rest for a few minutes, allowing the flavors to meld together.
Step 7. Garnish the paella with freshly chopped parsley and serve with lemon wedges on the side for added freshness. Serve it directly from the skillet for an impressive presentation.
