Saffron fish soup

This Creamy Saffron Fish Soup is a delightful and aromatic dish that combines the flavors of salmon, cod, and shrimp with a medley of fresh vegetables and fragrant herbs. Ingredients

  • 8 ounces salmon fillet, skin removed, cut into bite-sized pieces

  • 8 ounces cod fillet, cut into bite-sized pieces

  • 8 ounces shrimp, peeled and deveined

  • 2 medium-sized carrots, peeled and diced

  • 1 leek, white and light green parts only, sliced

  • 1 stalk celery, diced

  • 1 medium-sized potato, peeled and diced

  • 4 cups fish or vegetable broth

  • 1 cup white wine

  • 1/2 teaspoon saffron threads

  • 1 teaspoon dried thyme

  • 1 tablespoon fresh basil, chopped

  • 1 tablespoon fresh dill, chopped

  • 1 cup heavy cream

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions

  1. In a small bowl, combine the saffron threads with 1 tablespoon of hot water. Let it steep for about 10 minutes to release the flavors and color.

  2. Heat the olive oil in a large pot over medium heat. Add the sliced leek, diced carrots, celery, and potato. Sauté for about 5 minutes, until the vegetables start to soften.

  3. Add the white wine to the pot and let it simmer for a couple of minutes to cook off the alcohol. Stir occasionally to scrape any browned bits from the bottom of the pot.

  4. Pour in the fish or vegetable broth, saffron mixture, dried thyme, and season with salt and pepper. Stir well to combine all the ingredients. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15 minutes, until the vegetables are tender.

  5. Add the salmon, cod, and shrimp to the pot, and cook for an additional 5-7 minutes, or until the fish is cooked through and the shrimp turns pink.

  6. Stir in the heavy cream and fresh herbs (basil and dill). Simmer for another 2-3 minutes, allowing the flavors to meld together. Adjust the seasoning if necessary.

  7. Remove the pot from heat and let the soup rest for a few minutes before serving. Ladle the Creamy Saffron Fish Soup into bowls and garnish with additional fresh herbs if desired.

  8. Serve the soup hot with crusty bread on the side and enjoy!


    Note: Saffron brings a distinctive flavor and color, but if you don't have saffron threads, you can substitute with a pinch of turmeric powder for a similar color and mild flavor. Adjust the amount to your preference.
