Ingredients

  • 1 pound of beef, thinly sliced

  • 2 medium potatoes, peeled and diced

  • 2 tablespoons sambal oelek

  • 4 cups beef stock

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • 2 teaspoons vegetable oil

  • 1 teaspoon paprika

  • 1/2 teaspoon cayenne pepper (adjust to taste)

  • Salt and pepper to taste

  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until they turn translucent and fragrant.

  2. Add the thinly sliced beef to the pot and cook until browned, while stirring occasionally. This should take about 5-6 minutes.

  3. Sprinkle paprika, cayenne pepper, salt, and pepper over the beef, ensuring that all slices are evenly coated. Continue cooking for another 2 minutes.

  4. Pour the sambal oelek into the pot, followed by the beef stock. Stir everything together and bring the soup to a boil.

  5. Once it starts boiling, reduce the heat to low and let the soup simmer for approximately 25-30 minutes.

  6. Add the diced potatoes to the pot and cook for another 20 minutes, or until the potatoes and meet are soft.

  7. Taste the soup and adjust the seasoning to your preference. If you prefer a spicier soup, you can add more sambal oelek or cayenne pepper.

  8. When the soup is ready, ladle it into serving bowls and garnish with freshly chopped cilantro, if desired.
